Finally! A Low-Carb Pizza Crust to Cheer About

I have been on the lookout for decent keto and low-carb pizza crust recipes for the past several months. My husband is doing the keto diet and I am often looking for new ways to make low-carb versions of our favorite foods.


After many trial and error pizza nights with not-so-great results, I've finally landed on a pizza crust recipe I can stand by. It is simple, yet tasty, and only uses a handful of ingredients.



Since we have been cooking more low-carb dishes, we use quite a bit of Almond Flour. The Blue Diamond brand is my favorite as I feel it cooks well and is reasonable priced.


For this keto pizza you will need:

- 2 cups almond flour

- 1 tsp Italian seasoning

- a dash of salt

- 1 large egg

- 1 can tomato sauce

- 1 tsp minced garlic

- 1 1/2 cups shredded mozzarella (I only had Italian blend on hand but it works well too)

- pepperonis (or your choice of toppings)



Step 1: Mix the dry ingredients together. (almond flour, baking soda, seasoning, and a dash of salt)




Step 2: Add the egg to the dry mixture and stir with wooden spoon until it start to become a crumbly mixture. Then use your hands to mix and knead into a smooth dough. (It may still be slightly crumbly but should hold together fairly well.)




Step 3: Grease a baking sheet of your choice. I like to sprinkle a little almond flour over the greased sheet. It seems to help when rolling out the dough.




Step 4: Press out the dough while carefully pinching the edges together. (This recipe made a smaller pizza so if you want a larger size, just double the recipe.)


Step 5: Bake for 8 minutes at 400 degrees.


Meanwhile...




Step 6: Add can of tomato sauce to small sauce pan. Add salt, pepper, tsp of Italian seasoning, and teaspoon of minced garlic. Simmer on low until pizza crust is done. (I also added a little Stevia to ours to sweeten it up a bit, but this is optional.) *Note - we only used about half the can on our pizza so I saved the rest for our next pizza night.





Step 7: Pull the pizza crust out of oven and add your toppings.


Step 8: Bake for an additional 7-8 minutes and then remove from oven. Time to enjoy!






As far as low-carb pizzas go, this is one of the most successful recipes I have tried. The crust held together fairly well and the Italian seasoning added a great flavor. I can also say this pizza is toddler approved as my two-year-old loved it.
